Episode #5: A cure? Nope…but close…

Show Notes: Episode 5

I was catching up on my celiac news and came across a link to this article on glutenfreeda.com. I’ve heard of pills like this that help lactose intolerant people eat diary (some of my friends have used them and they can now eat whatever dairy they want)…but I didn’t know that something similar for celiac disease could be coming about so soon.

The whole thing really intrigues me. I’m curious how the gluten free population will embrace it. Some people I’ve talked to are obviously ecstatic about the freedom these pills would give back to them, whereas others have their gluten free routine down to an art and are happy with it. They’ve said that even if they could, they probably wouldn’t go back to eating the way they used to. But…I guess we’ll just have to wait and see how it all plays out.

Episode #4: Kinnikinnick Pizza Crust Review

We love pizza…and the Kinnikinnick 7 inch frozen pizza crust has become one of our favorite snacks! I like it because it’s quick and easy to make. Also…I really like that it doesn’t taste starchy like a lot of rice based gluten free products can. And on top of that, since you’re getting 4 crusts in one package I actually feel like I’m getting my money’s worth.

 

We buy Kinnikinnick crusts at our local grocer. On the Kinnikinnick website you can search for a distributor near you, or buy directly from their site. I also found them at the Wellness Grocer, but they’re more expensive there.

 

As I was gathering all the info for today’s show notes, I came across a new post on Kinnikinnick’s official blog. Apparently they’re going square! They’ve newly automated their manufacturing of these pizza crusts and have thus had to make them square (the post goes into the details of why). But, that means that now they’re able to make a lot more of them a lot faster! So in a couple weeks, be on the look out for new square crusts!

Episode #3: Superbowl+Avocado+Dip=$1,000

The other day I came across a random avocado video contest online which we decided to go ahead and enter–turns out we won $1,000!…after a few ridiculous hours of dancing with avocados and making our favorite party dip, we had our video. The dip is really tastey, gluten free, and great for superbowl parties! so we thought we’d share it with you all too!

Ultimate Avocado Party Dip

-2 avocados
-1 green bell pepper
-1/4 c. fresh cilantro
-1 can black beans (drained)
-1 can white corn (drained)
-2 cans rotel (one drained)
-1 tsp. cumin
-salt
-pepper
-olive oil
-juice from 1/2 lime

Dice the avocados and bell pepper, finely chop the cilantro and put in a large serving bowl. Add the black beans, corn, rotel and cumin. Add salt, pepper and olive oil to taste. Squeeze the fresh lime juice over the dip and then mix together. Cover with cling wrap and chill in the fridge before serving.

Episode 1 – Using a panini press for gluten free sandwiches

Using a panini press helps make the texture of gluten free bread far more enjoyable to eat. We used a Calphalon Contemporary Nonstick Panini Press, but there are lots of other presses out there that can help you achieve the same results. Look around and find one that fits your style and budget.
The other ingredients used in this episode were:
  • ENER G White Rice Loaf – We got it at our local grocery store, but you can also order it online if your store doesn’t carry it. The ENER G site has some cool options to order by the case or in two slice packets!
  • Annie’s Naturals Cowgirl Ranch Dressing – Don’t ask me where they came up with that name, but there it is. I’ve always been a traditional Hidden Valley Ranch kind of gal, but this is actually really really good! And very tasty on sandwiches in leu of mayo.
  • Fresh sliced Boar’s Head turkey and Swiss cheese from the grocery deli.
  • And finally, tomato, avocado and last but certainly not least! Oscar Meyer bacon.
